Blueberry Breakfast Bites

I absolutely LOVE blueberry muffins. Yet sometimes they can seem too dry or too heavy on my stomach. I tweaked an old recipe of mine and thought I would share it with you guys! These breakfast bites are not only delicious but on the healthier side.

Ingredients

  • 4 tablespoons + 4 teaspoons Truvia Baking Blend
  • 1 egg
  • 1/2 cup vegetable oil
  • 1/3 cup milk
  • 1 teaspoon vanilla
  • 1 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup non fat vanilla yogurt
  • 1 cup blueberries



First preheat oven to 375 degrees. Lightly spray your muffin pan with non stick cooking spray. I find it easier to use the smaller size muffin pan so that they end up being bite size.

Combine Truvia baking blend, egg, oil, milk, and vanilla in a bowl and stir.

Add flour, baking powder and salt. Stir until texture is smooth. Then stir in your yogurt.

Pour most of your blueberries into the bowl. After filling up your muffin pans, you can then distribute the rest of the blueberries over the top so that they are visible.
