Cinco de Mayo Recipe – Turkey Nachos

Cinco de Mayo is tomorrow and why go to one of those busy restaurants when you can celebrate at home! I put together this tasty recipe for you guys who are wanting something different. What is even more great about this recipe is that you can add all of your personal favorites.

Ingredients

  • 1lb ground turkey/beef
  • 1 8oz jar taco sauce
  • 1 15oz can black beans, drained and rinsed
  • 1/4 cup chopped pickled jalapenos
  • 2 cups shredded sharp cheddar cheese
  • 2 cups shredded pepper jack cheese
  • 1 large bag of tortilla chips
  • 1 10oz can diced tomatoes
  • 1/2 cup cilantro leaves, chopped
  • juice of 1 lime
  • 1tbls olive oil

Before you start cooking make sure your oven is preheated to 350 degrees. Place a large skillet over medium high heat and add in ground turkey (or beef). I am not a huge onion fan but you could add 1 cup of medium diced onions into the skillet as well. Make sure meat is full cooked before draining. Place drained meat and onions in a large bowl and combine with taco sauce, beans and jalapenos.

In a smaller bowl, combine the sharp cheddar and pepper jack cheeses. Then lay the tortilla chips out on a baking sheet/oven safe skillet. Spread the turkey/beef mixture over the chips and top with the mixed cheeses.

Bake for 20 minutes or until cheese has melted. While the nachos are baking, combine tomatoes, cilantro, lime juice and olive oil into a separate bowl. You can add one diced avocado and half of a cup of red onions as well. Spread mixture over baked nachos and serve with a side of sour cream.
