Mommy Meal Prep – Taco Salad

If you are a mother you already know how hard it is to take time for yourself. My son is 3 months old now and I still have yet to find the time to eat. Not getting enough nutrition has hindered my body so I decided to start meal prepping. This week I am having taco salad for lunch.

First, I wanted something more than a plastic like container. I bought the Glasslock and Kinetic glass meal container sets. I love that I can not only use them in a microwave but they are freezer and oven friendly as well.

Secondly, I order all of my food through Kroger’s ClickList. If you have an option to pick your groceries up then I suggest taking it. I love that I do not have to get my son out for a two hour trip in the grocery store. It also has saved us so much money because we are no longer over spending.

As for the taco salad you can add or take away any ingredient. This will make 5 taco salads to get you through your week and cost less than $20!



Ingredients:

  • 24oz Bag Garden Salad
  • 1lb Turkey or Hamburger Meat
  • 1 Taco Seasoning Packet
  • 1 Can of Light Red Kidney Beans
  • Shredded Cheese
  • 3-4 Diced Tomatoes
  • Sour Cream
  • Tortilla Strips

Meal-Prep-Taco-Salad-Recipe

You will want to put the lettuce into small Ziploc bags to keep it fresh. Then cook whichever meat you chose and add your seasoning. Make sure you drain the meat before you add your seasoning. I chose to drain a can of light red kidney beans and throw them in as well.

Afterwards, I placed the meat in the glass containers I purchased and began prepping all of my toppings. I bought portion control cups and placed my sour cream, cheese, tomatoes and tortilla strips in them.
