Chia Seed Omelette Recipe

There are only two omelettes that I will cook. The first being my feta cheese and sausage omelette and my second being this chia seed omelette. Since I struggle with I.B.S. it is harder for me to get protein through certain meats. So I make sure I get protein through other foods such as eggs. Recently, I even purchased a tasteless protein powder and have been adding it into my water, cereal, eggs and oatmeal. Be on the lookout for an upcoming review soon. Anyways, below you can find my personal recipe for this easy dish!

Serves 1    |   Prep Time 10 Minutes  |  Cook Time 5 Minutes

  • 2 large eggs
  • 1 teaspoon chia seeds
  • pink Himalayan salt/ground pepper, to taste
  • 3/4 teaspoon olive oil
  • 1 small handful baby spinach leaves
  • 1/2 medium tomato, diced
  • 2/3oz Mexican blend shredded cheese


  • Whisk eggs, chia seeds, salt and pepper together in bowl.
  • Heat olive oil in a non-stick pan over medium heat.
  • Pour in the egg mixture and swirl to cover the base of your pan.
  • Cook for 1-2 minutes or until you notice the egg setting and the underside is golden.
  • Reduce heat to medium-low.
  • Sprinkle spinach, tomato, and cheese over the top and allow it to cook for 1 minute or until the egg is set.
  • Fold in half to cover the filling and transfer to a plate.
